Roelli Cheese Factory has formed relationships with wholesale and distribution partners nationwide. We currently craft approximately 200,000 pounds of cheese per year from the milk of one local farm family. Currently Dunbarton Blue, Red Rock, Roelli Haus Select and Little Mountain are sold in small quantities to wholesalers, distributors, retailers and food service.

Dunbarton Blue
Our original recipe flagship cheese, Dunbarton Blue Cheese! A hand crafted, cellar cured cheese with the earthy character of a fine English-style cheddar, coupled with the subtle hint of blue flavor. Open air curing creates a natural, edible rind. Made with pasteurized cow’s milk and aged at least 90 days.
Appearance: Blue cheese has a pale, off-white to yellowish interior with characteristic blue-green veins or streaks running throughout. These veins are formed by the growth of edible mold.
Taste/Flavor: Blue cheese generally has a strong, pungent, and tangy flavor, which can be described as sharp, earthy, and sometimes even spicy.

Red Rock Cheese
Our original recipe, American style, naturally bloomy rinded cheddar cheese with a slight blue vein. Richly colored with annatto and cave aged to maturity. Mild flavored with a creamy texture. Made with pasteurized cow’s milk and aged at least 60 days. Hand cut and wrapped in plastic and recommended to enjoy within 3 weeks.

Our very best batches of cellar aged cheddar cheese, hand selected when it’s at its best by Master Cheesemaker Chris Roelli. Cheese is ripened a minimum of 90 days but may be as long as 3 years. Made with pasteurized cow’s milk.
Appearance: Roelli Select Cheddar Cheese is richly colored with annatto and includes a coated edible rind.

Roelli Cheddar
Hand crafted in small batches by Master Cheddar Cheesemaker Chris Roelli, block style cheddar cheese cellar aged.
- Mild Cheddar is aged over 30 days
- Medium Cheddar is aged over 6 months
- Sharp Cheddar is aged over 12 months
- Extra Sharp is aged over 24 months

Little Mountain
A traditional washed rind Alpine cheese made in the Appenzeller style. Made with raw cow’s milk and aged at least 6 months. This one will make you want to yodel!
APPEARANCE: Ivory to cream-yellow and firm, becoming more crumbly or crystalline as it ages, featuring holes (“eyes”) that can vary in size similar to swiss cheese.
Taste/Flavor: Has a smooth and nutty flavor.

Fresh and squeaky young cheddar cheese curds, handmade weekly in the Roelli Cheese factory. (1/2 lb or 1 lb bags)
